ISLAND LOAF

Page 72 of Fabulous Beans. Has sunflower seeds (ground), navy beans, whole wheat bread crumbs, rolled oats, pineapple juice, green pepper, molasses, mustard, garlic powder, salt, and crushed pineapple on top. A meatless meatloaf that has no soy or any other "weird" stuff!

Grains

Organic grains here ... maybe we could find some of the harder-to-find ones here? Good pictures, too. Now how do I cook them?

I'm going to make the "Rice 'N' Rye" tonight. This is a good whole-grain dish.

2 1/4 to 2 1/2 cups water (use the higher amount in jiggle-top cookers)
1 cup brown rice
1/3 cup rye berries (or wheat, triticale, or kamut)
Seasonings
1/2 tsp salt, or to taste

Bring water to a boil in the pressure cooker. Add rice, rye, seasonings, and salt. Lock lid in place. Bring to high pressure, reduce temperature to maintain pressure, and cook for 35 minutes. Allow pressure to come down naturally for 10 minutes, and then release any remaining pressure.

The bread was very good! This time, it doesn't have sunflower seeds, and half of the flour is soft white wheat berries. It is baking right now! Katie is sleeping! :-)

This is wonderful sauce!!!!

Vegan Soy-Free Alfredo Sauce

2 cans Great Northern beans
1 large can coconut milk
a lot of fresh garlic
¼ tsp black pepper or more to taste
1 tsp salt
2 Tbsp red wine vinegar

Put it all in the Vita-Mix and blend it until smooth and hot.

Maggie said it was the bestest sauce she ever had!
It could maybe use a little more salt and garlic, maybe a touch more vinegar? Very good this way, though!
